Der „Dafnios“ Weißwein wurde erstmals im Jahr 2005 veröffentlicht. Das Etikett wurde 2010 und zuletzt 2022 neu gestaltet. „Dafnios“ leitet sich vom Namen unseres Dorfes Dafnes ab.
Servieren von Dafnios Weißwein
Er sollte bei einer Temperatur von 9-10°C serviert werden und passt gut zu Fischgerichten wie Seezunge, Petersfisch, gegrillter Makrele und Schwachfisch. Er passt auch zu Schweinefleisch mit Sellerie, dem traditionellen kretischen Schweinefleisch mit Lauch, Lammfleisch mit Salat. Er ist auch ein idealer Begleiter für Kichererbsensuppe mit Zitronensauce oder Salat aus gekochten Kichererbsen mit Kräutern.

Klassische Weißweinbereitung mit Gärung in Edelstahltanks bei einer Temperatur von 18°C. Weder bei der Gärung noch bei der Reifung werden Fässer verwendet.

Gesamtsäuregehalt : 5,4g/l
Gesamtschwefelgehalt : 105 mg/l
pH-Wert : 3,46
Er kann bis zu 5 Jahre gelagert werden. Mit der Zeit entwickelt er einen überraschend anderen Charakter. Frische Fruchtaromen gehen über in Butter, dichte Aprikose, Melone, Wachs, aber auch Feuersteinnoten.

Moderately full, with a buttery volume and fruit at precise ripeness, carried directly from the aromatic profile and sharply supported by pronounced levels of acidity. Its distinctly spicy character is confirmed, as is the overall warm contribution of alcohol, without ignoring the influence of sulphur. Perhaps slightly heavy in style. Very good finish, with a fleeting mineral passage, softly phenolic yet intensely spicy, almost hot. A citron-like lift underscores the acidity, while scorched spices and herbs add to the burn of alcohol and sulphur. |

It is beautiful and already presents a complex aromatic profile of spices and cedar (not derived from oak, as far as I know, since it has not been aged in barrel), with a pleasing, woody sense of freshness. On the palate it is not completely dry; in fact, it appears slightly sweeter than anticipated, while still remaining a relatively dry, gastronomic wine. It is intense, deep, and full of flavor—an excellent example of the level Crete is capable of achieving today. Spicy and golden, full-bodied without being heavy, it combines flavors of apricot and orange with the lively, refreshing acidity of quince. Concentrated and mouth-filling, it remains impressively fresh. Take note of its subtle sweetness if you prefer wines that are absolutely dry—personally, however, I find it powerful, beautifully balanced, and highly enjoyable. |

As clean and fresh as it is, it also shows a pleasing firmness through the mid-palate and a fine finish. Although somewhat “tight” in its youth, its fruit purity is truly impressive. This is not, however, a wine (or a variety) with a strongly assertive personality—it leans more toward the style of a dry, clean Chardonnay. The finish shows some fruity expression—more so in other vintages I have tasted—yet it still holds the palate well, at least at this early stage. It should open up further with a few months in the cellar and may well be better by spring 2018. Finally, both the winery and the importer suggest it can age for more than 10 years, possibly up to 15. How elegantly it will evolve and develop—as opposed to simply “holding on”—remains an open question for me; and given the many variables in storage conditions, it seems wise to proceed cautiously and gradually. |

On the palate it is very appealing: medium in volume yet quite broad, with generous yellow fruit highlighted by lemon and lime zest and notes of fresh almond. The acidity is well integrated, relatively high, and provides an excellent sense of freshness. The finish is medium to long—rounded, truly juicy, with good fruit clarity. Very pleasant to drink now and over the next few years. |

While it may not be as striking as the winery’s Femina (which has become one of my personal “sure favorites”), it certainly does not fall short in terms of quality-to-price ratio. Although it can theoretically age, for best results it should be enjoyed young and fresh. The more Douloufakis wines I taste, the more I enjoy them—everything seems to exceed expectations. They offer excellent flavor at prices ranging from very good to truly impressive. |

When you experience just how fresh, clean, and captivating this Vidiano is, it is easy to wonder why some versions are aged in barrel (even though oak often works well). Taste is, of course, subjective, but personally I find this wine far more appealing than the barrel-aged Vidiano from the same winery, which was also reviewed in this issue. I have encountered it elsewhere on the island, but this is the first time I have seen it from this winery. It is clean and crisp, with a slight lemony note on entry. It offers sufficient body for its price level and shows nice persistence on the flavorful, juicy finish. This is a wine with good fruit purity—refreshing yet reasonably solid and round through the mid-palate. It works very well as a summer white, but it can also hold its own alongside food. It does not reward cellaring; it is best enjoyed young and fresh. It should be ideal in the summer of 2013. Drinking window: now through 2015. |
