Vinification in simple words

Vinification or winemaking  is  the process that leads from grape to wine. We can distinguish two types: red and white  vinification.  In red vinification we use red grapes. With extraction (juice and skin stay together for a while) we get the pigments that give colour and tannins to  the wine. Absence of extraction and immediate removal of  the skins gives us white wines, even if the grapes are red,  such as Moschofilero. The main difference between  red and white vinification  is to keep the skin and juice of the grapes in contact. If  the process  lasts for a short  time,  it will give us rosé wines.
